Certificates and scheduled inspections show how an outlet performs when it knows someone is coming. An operational audit is meant to show the rest of the week.
An operational hygiene audit checks day-to-day practice in a food or retail outlet against a written standard. For most chains, that standard is their own SOP manual, which in turn follows the general hygiene and sanitary requirements that FSSAI sets out in Schedule 4 of the licensing and registration regulations. We turn the manual into a structured checklist with clear pass, partial and fail definitions, so two auditors in two cities score the same thing the same way.
Auditors visit during trading hours, usually without notice, and record what they observe: hand-washing stations stocked, raw and cooked food separated, chillers at the right temperature, date labels present, pest control logs current, and staff wearing hair covers and gloves where required.
Why evidence matters
Outlet managers dispute scores. A photo of a mislabelled container, with time and location attached, ends that dispute quickly and lets the operations team focus on fixing the cause instead of arguing about the finding.

Can Bharat Survey give our restaurant an FSSAI hygiene rating?
No. FSSAI hygiene ratings are audited only by Hygiene Rating Audit Agencies recognised under FSSAI's scheme, which QCI operates. We run internal operational audits that help outlets prepare, but we cannot award or influence an official rating.
How often should outlets be audited?
Most chains start with monthly or quarterly visits, with extra visits for outlets that fail critical items. Frequency depends on outlet count, risk level of the menu and how quickly corrective action is expected.
Can we use our own checklist?
Yes, and we recommend it. We convert your SOPs into scored items, add photo rules and clear definitions, and calibrate auditors on pilot outlets so scoring is consistent across cities.
How is audit pricing decided?
